Hey, it’s back-to-school time and as we do our best to ease back into our normal routines, we need less fuss in everything we do. Thanks to our friends over at Cooking Professionally, we found this great recipe that can cut down less time in the kitchen while providing full tummies for your little ones!

Is it dinner? Is it breakfast? Is it breakfast for dinner? Yes, to all three! Mama’s Hamburger Hash is meat and potatoes at its most comforting; savory, crispy, and filled with fluffy potatoes and juicy, beefy goodness! You can even crack eggs over it and steam it for a self-saucing dish with extra heartiness! Mom knows this is the kind of dish that keeps you energized in the morning and feeling relaxed in the evening. After all, that’s why she made Mama’s Hamburger Hash in the first place!

Time: 40 minutes

Yield: 6 servings

Ingredients

  • 1 pound lean ground beef
  • 1 shallot, diced
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons salted butter
  • 1 pound oven-ready potato and onion mix, store-bought, cooked and diced, can substitute leftover cooked potatoes and onions
  • 2-3 eggs, optional

Directions

Step 1 – In a large skillet over medium-high heat, add the beef and the shallot and cook, while crumbling the beef, until browned, about 5-7 minutes.

Step 2 – Season the beef mixture with the salt and the pepper.

Step 3 – Drain any excess grease from the skillet.

Step 4 – Transfer the beef mixture to a plate or bowl.

Step 5 – Add the butter to the pan to melt.

Step 6 – Return the cooked beef mixture to the pan.

Step 7 – Add the potato and onion mix to the pan and heat it through, seasoning with the salt and the pepper if needed.

Step 8 – Using the back of a spatula, press down on the hash mixture.

Step 9 – Allow the hash to cook until crisp on the bottom, about 3 minutes.

Step 10 – Flip the hash and cook until crisp on the other side, about 2-3 minutes.

Step 11 – Crack the eggs over the top of the hash and cover.

Step 12 – Allow the eggs to cook until they reach your desired level of runniness, about 3-5 minutes.

Step 13 – Serve.
