Prep time: 55 minutes
Yield: 8 servings

Ingredients

For the chili:

2 tablespoons vegetable oil
1/2 onion, finely chopped
2 cloves garlic, minced
1 pound lean ground beef
2 1/2 tablespoons chili powder
1 teaspoon sugar
1/2 teaspoon cumin
1 teaspoon Worcestershire sauce
3 tablespoons tomato paste
1 cup beef broth
3 tablespoons corn meal
1/2 tablespoon kosher salt, plus more, to taste
For serving:
8 hot dogs, cooked and hot
8 hot dog buns
cheddar cheese, to taste, shredded

Directions

Step 1 – In a medium saucepan over medium-high heat, add the oil and the onions and sauté until they are translucent.

Step 2 – Add the garlic to the onion and cook until fragrant, about 1 minute.

Step 3 – Add the beef to the onion mixture and cook until it is no longer pink. As it begins to brown, use a potato masher to grind it into small bits.

Step 4 – Drain the excess grease from the saucepan.

Step 5 – Add the chili powder, the sugar, the cumin, the Worcestershire sauce, the tomato paste, the beef broth, the corn meal, and 1/2 tablespoon of the salt to the beef mixture and stir to combine.

Step 6 – Reduce the heat to a simmer and cook for 15 minutes.

Step 7 – Taste the chili mixture and add more of the salt as needed.

Step 8 – Place the hot dogs in the buns, top with the chili, and sprinkle with the cheese.

Step 9 – Serve.
