Growing up, our parents would take turns cooking dinner each week. When it was mom’s turn, we could definitely count on there being lots of healthy, green-filled options. On the other hand, when it was dad’s turn, we always knew we were in for a real savory treat. Pop’s Creamy Chicken made a frequent appearance on his menu, and we loved it. We didn’t realize how easy it was for him to make the juicy chicken, all covered with a special creamy, buttery, and slightly spicy sauce. It was then, and is still now, just so tasty! Ingredients

4 chicken breasts, boneless and skinless, pounded to equal thickness
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1 cup reduced-sodium chicken broth
1 tablespoon fresh lime juice
1/4 cup onion, finely chopped
1 tablespoon cilantro, chopped, plus more, to taste, for garnish
1/2 teaspoon red pepper flakes
3 tablespoons heavy cream
2 tablespoons unsalted butter, cubed
lime wedges, to taste, for garnish

Directions

Step 1 – Preheat the oven to 375 degrees F.

Step 2 – Sprinkle the chicken breasts with the salt and the pepper.

Step 3 – In a large oven-safe skillet over medium-high heat, heat the oil.

Step 4 – Add the seasoned chicken breasts to the oil and cook, turning once, until they are browned on the outside, about 6-7 minutes. They will not be cooked through.

Step 5 – Transfer the chicken breasts to a clean plate and cover tightly with foil.

Step 6 – Transfer the skillet from the heat and add the broth, the lime juice, the onion, 1 tablespoon of the cilantro, and the red pepper flakes.

Step 7 – Return the skillet to the heat and bring the sauce mixture to a boil, while stirring, to loosen any of the browned bits from the bottom of the pan.

Step 8 – Gently boil the sauce mixture, uncovered, until it has reduced to about 1/4 cup, about 10 minutes.

Step 9 – Reduce the heat to medium-low. Add the heavy cream and the butter to the sauce and stir until the butter has melted.

Step 10 – Add the chicken breasts to the sauce.

Step 11 – Transfer the skillet to the oven and bake the chicken mixture until the meat reaches an internal temperature of 165 degrees F and the juices run clear, about 5-10 minutes.

Step 12 – Transfer the skillet to a wire rack and spoon the sauce over the chicken breasts.

Step 13 – Serve the chicken breasts covered in the sauce from the skillet, garnished with the extra cilantro and the lime wedges.
