Croquettes are a Spanish delicacy and, thanks to our chefs at Cooking Professionally, they are easier to make than you think! These Chicken Croquettes are full of scrumptious flavors and fried to perfection. They contain Serrano ham, nutmeg, chicken, and tasty seasonings to bring out all of the ingredients’ deliciousness. Squeeze some lemon over Chicken Croquettes and sink your teeth into their yummy crispy outsides and soft fillings. You won’t be able to get enough of these savory, indulgent treats!

Ingredients:

2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 cups chicken, roasted and minced
1/2 cup Serrano ham or prosciutto, finely chopped
1/2 teaspoon nutmeg, grated
salt, to taste
ground pepper, to taste
1/4 cup all-purpose flour, plus more for dredging
3/4 cup plus 2 tablespoons whole milk
2 large eggs
1 cup bread crumbs, fine and dry
vegetable oil, to taste, for frying

Directions

Step 1 – Melt the butter in the olive oil in a large skillet over medium heat.

Step 2 – Add the chicken, ham, nutmeg, salt, and pepper.

Step 3 – Cook, stirring, for 3 minutes.

Step 4 – Stir in 1/4 cup of the flour.

Step 5 – Gradually whisk in 3/4 cup of the milk.

Step 6 – Simmer for 3 minutes, stirring occasionally.

Step 7 – Scrape the croquette mixture into a bowl and let it cool.

Step 8 – Cover the mixture and refrigerate it until it is chilled, at least 1 hour.

Step 9 – Divide the croquette mixture into 16 equal portions.

Step 10 – Using wet hands, roll the portions into oval croquettes.

Step 11 – Preheat the oven to 325 degrees F.

Step 12 – In a shallow bowl, beat the eggs with the remaining 2 tablespoons of the milk. Spread the bread crumbs and the all-purpose flour in 2 separate shallow bowls.

Step 13 – Dredge each croquette first in the flour, then dip it in the egg.

Step 14 – Coat the croquettes with the bread crumbs and transfer them to a platter.

Step 15 – In a small saucepan, heat 1/2-inch of vegetable oil until it is shimmering.

Step 16 – Fry 4 croquettes at a time, turning twice, until golden brown, about 3 minutes.

Step 17 – Transfer the croquettes to a wire rack set over a baking sheet and keep them warm in the oven while frying the remainders.

Step 18 – Serve them immediately with lemon wedges.
