Ingredients

1 pound ground beef
1/2 cup onion, chopped
2 teaspoons smoked paprika
2 teaspoons garlic powder
4 cups potatoes, diced
5 cups chicken broth
4 cups cheddar cheese, shredded
1 tablespoon cornstarch
1 1/2 tablespoons dried parsley, plus more, to taste, for garnish

Directions

Step 1 – In a medium-sized skillet over medium-high heat, add the ground beef, the onion, the paprika, and the garlic powder and stir to combine.

Step 2 – Cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Set the beef mixture aside.

Step 3 – In a large pot over medium-high heat, add the potatoes and the chicken broth and cook until bubbling, about 10 minutes.

Step 4 – Add the cheddar cheese and cook, while stirring constantly, until the cheese is completely melted.

Step 5 – Add the ground beef mixture, the cornstarch, and 1 1/2 tablespoons of the parsley and cook, while stirring, until the beef is evenly distributed in the soup.

Step 6 – Continue stirring the soup until it begins to bubble and the potatoes are tender, about 2-3 minutes.

Step 7 – Serve garnished with the extra parsley.
