In these times of vegan meals, salads and lite meals, sometimes, you miss craving something rich and hearty. The snuggle and cuddle weather is still lingering around long enough for time to enjoy a bowl of delicious hot soup. Well, thanks to our friends again over at Cooking Professionally, we have the perfect recipe for you.
While the 40th President of the United States was very well-known for having a sugary sweet tooth (it’s said he loved jellybeans and licorice), this movie star turned politician had savory cravings, too. Ronald Reagan’s Favorite Hamburger Soup highlights the love he had for juicy ground beef soaking in a salty and veggie-filled broth. Can’t you just picture him returning from a long day of making big decisions and giving big speeches, sitting at the table sipping on an even bigger bowl of this simply delicious soup? It probably felt so comforting, reconnecting him back with his slow-paced Midwestern roots.
Try this out!
- 2 tablespoons butter
- 2 pounds lean ground beef
- 2 cups onions, diced
- 2 cloves garlic, chopped
- 1 1/2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup green bell pepper, diced
- 3 quarts beef broth
- 16 ounces tomatoes, chopped
- 1/4 teaspoon ground black pepper
- 10 ounces hominy
Step 1 – In a large pot over medium heat, melt the butter.
Step 2 – Add the beef to the butter and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
Step 3 – Add the onions, the garlic, the carrots, the celery, and the green bell pepper to the beef and simmer, covered, for 10 minutes.
Step 4 – Add the beef broth, the chopped tomatoes, and the black pepper to the beef mixture and simmer over low heat for 35 minutes.
Step 5 – Add the hominy to the soup mixture and boil for 10 minutes.
Step 6 – Serve.
