Navigate your way through one of Houston’s’ most sophisticated oyster programs including Bludorn’s signature Oysters Everyway menu which includes raw, fried, and roasted preparations each with its own accompaniments; raw is served with house-made cocktail sauce, Bludorn’s signature Eight Zero Seven hot sauce and mignonette; Fried topped with gribiche and fresh caper berries and Roasted with melted cheese, watercress and hand-cut bacon. Understanding the importance of being a good steward to the environment to which he sources, Chef Bludorn proudly partners with the Galveston Bay Foundation’s Oyster Shell Recycling program.
