If you’re looking for a quick kick to spice up your mornings, Cooking Professionally has got you covered with these awesome Baked Breakfast Taquitos.
Ingredients:
• 1 pound Italian sausage, casings removed
• 1 medium onion, chopped
• 3 cloves garlic, minced
• 1/2 red bell pepper, chopped
• 1/2 green bell pepper, chopped
• 1 tablespoon Italian seasoning, to taste
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 6 eggs
• 16 small flour tortillas, whole wheat or white
• 1 cup cheddar cheese, shredded
• 4 tablespoons butter, melted
• salsa, for serving
• sour cream, for serving
Directions:
Preheat the oven to 400 degrees F. Lightly grease a 9×13 inch baking dish with melted butter.
In a large skillet over medium-high heat, cook the sausage until cooked through. When there’s no pink inside, drain excess grease.
Add onion and garlic to the skillet until the onion is soft and fragrant. Then, add the peppers and cook for 1 minute. Add the Italian seasoning, salt, and pepper.
Whisk together the eggs in a mixing bowl, and pour over the mixture. Cook the eggs until scrambled.
Assemble the taquitos by scooping a few tablespoons of the mixture on a tortilla. Top the mixture with cheddar cheese and tightly roll. Place the rolled tortilla into the baking dish. Repeat until you’ve used all the tortillas and mixture.
Brush the tortillas with melted butter and bake for 15 minutes, or until the tortillas are golden brown.
Serve with salsa and sour cream while warm!
