Ingredients

  • Pasta
  • Ricotta
  • Lemon
  • Parmesan cheese
  • Garlic
  • Baby spinach
  • Extra virgin olive oil
  • Salt and pepper

Directions

  1.  Combine main ingredients: ricotta, parmesan, extra virgin olive oil, garlic, lemon zest, salt and pepper. Mix them sufficiently and to your liking. While you are mixing this, cook your pasta until firm or al dente.
  2.  Reserve some of your pasta cooking water. Add spinach to the pot and cook for 1 minute.
  3. Drain pasta and spinach and return to the pot.
  4. Add the ricotta sauce, the cooking water, and stir well.
  5. Serve with a drizzle of olive oil,  freshly grated Parmesan cheese, and lemon wedges (optional).
  6. Enjoy!
